Paccheri with Broccoli and Cherry Tomatoes

A little bit of preparation and the addition of broccoli and sweet cherry tomatoes elevate this dish with an irresistible twist.  Ingredients:
  • 200 g Gustora Paccheri
  • 300 g Broccoli, cut into florets
  • 10-12 small Cherry Tomatoes, halved
  • 80 g Breadcrumbs 
  • 1-2 Garlic cloves, crushed
  • 1 White Onion, finely chopped
  • 1 fresh Red Chilli Pepper, finely chopped
  • Extra Virgin Olive Oil 
  • Salt to taste
  • Parmesan Cheese (optional)
 Recipe:
  • Boil the Broccoli florets for 10 minutes in salted water, drain and leave to one side. Use the water to cook the pasta.
  • In a separate pan, fry the crushed garlic in a bit of EVOO, add the bread crumbs and let it brown for around 5 minutes. Remove from flame and let it cool down on the side, it should be a crisp texture.
  • In a large pan, heat some oil and sauté the chopped onion on a medium flame until brown. Now toss in the broccoli and add chopped red chillies and a pinch of salt. Sauté for a few moments and reduce the heat. Now add the cherry tomatoes and toss well.
  • Add in the al dente pasta along with some pasta water. Stir fry on medium heat to create a beautiful medley of colours.
  • For plating, take a bowl and add the pasta along with the sautéed veggies. Sprinkle the garlic breadcrumbs and a drizzle of EVOO and serve warm. Optionally grated some Parmesan on top.
